What is Svan salt, and what is it used for?
Ingredients, flavour and what to eat it with.
Short answer
Svan salt is coarse salt mixed with garlic and spices: blue fenugreek (utskho suneli), coriander, dill, caraway, hot pepper and Imeretian saffron. It originated in mountainous Svaneti, where herb salt helped preserve food. It's added to meat, potatoes, soups, salads and eggs, or simply sprinkled on bread and butter.
Why
- Every Svan family has its own recipe, so the flavour varies.
- Svan salt is one of the most popular edible souvenirs from Georgia.
- It keeps for a long time in a dry, sealed jar.
