Many visitors assume Georgian breakfast means khachapuri. In reality khachapuri is more of a guest at the morning table than a daily dish. Most locals start the day simply: fresh bread, cheese, eggs, tea. The heavier hot dishes are kept for weekends, holidays and for cafés that cook with tourists in mind.
Breakfast is also regional. Adjara eats one way, Svaneti another, so the fact that no "one" Georgian breakfast exists is normal. The sections below show what stands on the table at home, what to order in a café and what changes from region to region.

Four products make up the base. First, bread: tonis puri shoti, which should be warm in the morning (more in our guide to Georgian bread). Second, cheese: sulguni, Imeretian or nadugi, usually just sliced and eaten with the bread. Third, eggs, most often fried in butter or hard-boiled. Fourth, matsoni, sometimes with honey.
Seasonal extras join them: tomato and cucumber in summer, jam or tkemali in winter, aubergine with walnuts if something is left from yesterday's supper. This is why breakfast in a guest house, where guests get the family table, is often better than in a city café.

A café breakfast menu mixes simple home dishes with a few "lunch-time" dishes made lighter for the morning. The table below puts them all in one place so you can check it at the counter.

If you pick only one, choose kikliko or chirbuli. Kikliko is the easiest for a foreigner to understand, and chirbuli sounds the most "Georgian". 🌊 What Do They Eat for Breakfast in Adjara
Adjara is the region where eggs and cheese are the main pair, and it shows in the morning dishes. Someone waking up by the sea naturally orders something hot and rich that will last through a day in the sun. That is why chirbuli, borano and Adjarian khachapuri appear in almost every Batumi café.

A practical tip: borano and Adjarian khachapuri are both cheesy and buttery, so do not order both for the same breakfast. Chirbuli pairs well with either, because its sauce cuts the richness. Where to sit in Batumi is covered below.
⛰️ How Breakfast Differs in Western Georgia, Kakheti and Svaneti
The morning table changes noticeably by region. The table shows what to look for on the road.

In Kakheti and Svaneti you will rarely find a breakfast menu: breakfast there is usually the guest house table. In the west, especially Samegrelo, there is a good chance of getting ghomi and elarji in a café.
🍲 What Is Khashi and Why Is It Eaten in the Morning

Khashi is a thick, hot soup of boiled beef feet and tripe. It is not an everyday breakfast but a morning ritual, eaten early, often after a big feast the night before. Salt and garlic are put on the table separately and you add them yourself. Vodka is traditionally served with it, but that is a custom and not a rule.
If you want to try it, go early, around 7 or 8 a.m. Khashi places run out fast and then wait for a new pot the next day. For a first-timer it is often a learning experience, so it is easier with a local.

📍 Where to Try Georgian Breakfast in Tbilisi
The capital has the widest choice, and the catalog covers almost every taste and budget. The easiest way to choose is by type of place, because that decides what lands on your plate and what time you can arrive.
If you want a classic morning with the dishes you came for, start with Tbilisi's cafés and canteens. That is where you will most often find eggs in walnut sauce, fried bread with cheese, fresh pastry and hot tea. Many of these places open early and close after lunch, so aim for the first half of the day. Check opening hours on the place's card.

If you would rather have good coffee and something light, look at Tbilisi's coffee houses. They tend to serve omelettes, syrniki, pastry and brunch rather than full national dishes. It is a good fit if you wake up late or are moving on the same day.
And if you want Georgian dishes in a more "restaurant" style, try the city's Georgian restaurants. Some of them open in the morning and keep a separate breakfast menu, especially in the centre and in areas popular with visitors.

The most "Georgian" breakfast is often not in a café or restaurant but in a guest house. The table is set by the host or her mother: hot bread, cheese, eggs, jams, matsoni and seasonal vegetables, sometimes mchadi or lobiani. Portions are large and in many places breakfast is already included in the price of the room.
So in the regions, especially Kakheti and Svaneti, do not rush to look for a café. Sit at the table, ask what each dish is called and listen to the story. That is how you recognise a local breakfast.
