🍴 Adjarian cuisine in Batumi - 8 places with sinori and borano
If you want to understand Batumi through its food, one Adjarian khachapuri is not enough. The local cuisine has its own signature dishes: sinori with matsoni and butter, hot borano with melted cheese, layered achma, and other rich dishes that are easy to miss during an ordinary tourist walk. That is why this ranking is useful not as just a list of addresses, but as a calm guide: where to go if you want to try real local Adjarian food, rather than simply ordering the most obvious item on the menu.
This cuisine is noticeably different from the more familiar idea many people have of Georgian food in general. Here, there is more cheese, butter, dairy-based dishes, and hearty, home-style food. Because of that, it is especially important not only to choose the right place, but also to understand in advance what to order first.

🗺️ Where these places are located in Batumi: ranking map
It is one thing to stop by a place while walking through the city center, and quite another to choose a spot on purpose where the focus is truly on local dishes. For this kind of cuisine, that really matters, because in Batumi, under the sign of a Georgian restaurant, you can get very different results: from careful regional cooking to a simplified tourist version.
🔍 What is worth trying besides Adjarian khachapuri
Sinori
Sinori may look like a simple dish, but in reality a lot depends on the dough, matsoni, and butter. If the fermented dairy base is weak or the dish is assembled carelessly, the flavor falls apart immediately. That is why sinori is a good way to quickly understand whether the kitchen works with care.
Borano
Borano is hot melted cheese with butter. It is important to eat it right away: once the dish cools down, both the taste and the texture begin to change. Good borano should be thick and stretchy, but not rubbery.
Achma
Achma is a layered cheese pie, and in a good version it should be soft, but not undercooked. If the dish is literally drowning in butter or, on the contrary, is too dry, that already says a lot against the kitchen.
Adjarian khachapuri
This is the region’s most famous dish, but even here the basics are quite simple: thin dough, cheese that is not too salty, and the right center matter much more than any dramatic presentation. If a place cannot get even this dish right, there is little reason to expect a miracle from the rest.

🍽️ What usually sets apart a good place with Adjarian cuisine
This cuisine has one very useful feature: it quickly shows how honestly a place works with the basics. Weak technique cannot be hidden here behind a complicated sauce or a long menu. If the dough is made carelessly, the cheese feels heavy, and the dish arrives already tired, you notice it immediately.
That is why a good choice is usually built not around a loud restaurant sign, but around simple signs: the dishes are prepared consistently, served hot, and local cuisine is not turned into decoration for tourists. That is exactly what matters in a ranking like this, even if the set of listings is updated later.
💡 Practical tips before your first order
What to order the first time
If you are only beginning to get to know Adjarian cuisine, the easiest option is to order sinori, borano, and Adjarian khachapuri. This set helps you understand the taste of the region without extra confusion and immediately shows whether the place really holds its specialization well.
How filling it is
These dishes are usually quite rich and filling. Because of that, it makes more sense not to order too much at once, but to build your order gradually or share it between two people. For a first visit, that is almost always easier than trying to handle everything separately.
Spice level
Adjarian cuisine itself is usually not spicy. But some places may bring sauces or extra additions, so if you do not like spicy food, it is better to mention that right away.
Service charge
In Batumi, a 10–15% service charge may already be included in the bill. That is quite common, so before paying, it is worth simply checking the receipt calmly.
Review from a catalog reader
Thomas Bauer, Vienna
When I arrived in Batumi, I wanted to try not only khachapuri, but specifically local Adjarian cuisine. In the MADLOBA catalog, I found exactly this selection and for the first time learned which dishes were worth trying: sinori, borano, and achma. From the list of restaurants, I chose one place and ordered sinori and borano — exactly what was recommended for a first знакомства with Adjarian cuisine. The taste turned out to be very unusual: a lot of cheese and butter, yet everything was still delicate and filling at the same time. I also found the advice to share these dishes between two people especially useful, because the portions really are quite generous.

I do wonder, though, about the best place for achma. I’ve heard mixed things, and I’m keen to avoid any tourist traps. It's a bit overwhelming trying to navigate all these culinary treasures in Batumi. Is there a spot you’d recommend for that perfect slice?
