Short answer
In Borjomi, walk through Central Park to the mineral spring and on to the open-air sulfur pools, take the cable car up to the plateau for views over the town, and hike the trails of Borjomi-Kharagauli National Park. The 9th-century Green Monastery is nearby. One or two days are enough for all of it.
