Short answer
For 3 days, base yourself in Tbilisi: a day for the Old Town, Narikala and the baths, a day for Mtskheta and Jvari, and a day for Kazbegi and Gergeti Church. With 4-5 days, add Kakheti with Sighnaghi and wineries, and Uplistsikhe with Gori, or Borjomi. Leave the sea and Batumi for another trip, as they're 5 hours away by train.
