In the Hetsuriani wine cellar, wine production is carried out in accordance with ancient traditional technologies.
Here the grape juice is immersed in huge clay vessels, the walls of which are pre-treated with honey. Such vessels are called kvevri. Then these vessels sink into the ground and stay there for about 2 years. During this time, ordinary grape juice turns into a traditional wine. It was by this technology that a famous drink was obtained thousands of years ago. A specific temperature is maintained inside this jug, and its own microclimate is created.
In addition to kvevri, the drink is also infused in oak barrels fired in an oven. Here you can buy different varieties of wines and attend a tasting.
